The horse mushroom is also known as the aniseed mushroom, a logical nickname that it owes to its slightly aniseed odour and flavour. Fun fact: the horse mushroom is one of the largest edible mushrooms in the world!
The younger the mushroom is, the better it tastes. The delicious aniseed-like flavour can be preserved by frying this mushroom only briefly. The horse mushroom is at its tastiest in a soup or a healthy salad.
