Salad with smoked chicken and mushrooms
When outdoor temperatures start to rise, a light salad is the ideal evening meal! This salad with smoked chicken breast and fried mushrooms is very easy to make and also low in carbohydrates.
What ingredients do you need for delicious dish?
- 1 punnet of white mushrooms (for a more intense flavour, use chestnut mushrooms)
- 3 sliced spring onions
- 5 tbsp of olive oil
- 2 finely chopped cloves of garlic
- Freshly ground black pepper
- 1 tbsp balsamic vinegar
- 50g of walnuts
- 80g of lettuce of your choice
- 1 thinly sliced smoked chicken breast
How do you prepare this summer salad for four people?
Clean the mushrooms using a soft brush or kitchen paper, and cut into strips. Fry the spring onions in 2 tbsp of oil in a frying pan for two minutes, and then add the mushrooms. Continue stirring for three to four minutes, while they fry. Fry the chopped garlic for the final minute, then season with salt and pepper.
Prepare the dressing by mixing the balsamic vinegar, the remainder of the oil and some salt and pepper in a bowl. Chop the walnuts coarsely, and you're ready to make your salad. Divide the lettuce evenly over four plates, then place the chicken breast and the mushrooms on top. Sprinkle the salad with the dressing and garnish with the walnuts.
